Nestled within the beautiful Adina Vineyard and Olive Grove, Estancia Adina offers a unique celebration of food, wine, and nature.

Our story is one of passion for flavour, a deep connection to the land, and a commitment to warm, family-friendly hospitality.

Inspired by South American, Northern Italian, and Mediterranean traditions, our dishes are crafted using locally sourced ingredients and thoughtful techniques that celebrate the region’s rich bounty.

As part of the Adina experience, guests can enjoy a full sensory journey in a shared space that includes wine tastings at the cellar door, olive oil tastings, and the opportunity to shop for premium olive products. With spacious gardens and a relaxed atmosphere, we invite families, friends, and furry companions to gather, indulge, and connect.

Our culinary team at Estancia Adina is driven by a shared passion for exceptional food and a commitment to celebrating the best of the Hunter Valley.

Led by Chef James, whose extensive experience spans across South America and Italy, and Niah, our Culinary Director and Food Designer, the team brings a wealth of knowledge, creativity, and innovation to every dish. Together, they honour the rich culinary heritage of the region. With a focus on locally sourced ingredients and thoughtful design, our chefs craft dishes that not only excite the palate but tell the story of the land and its people.

James’ journey with food began at a young age growing up in the South Island of New Zealand, working on dairy and cattle farms. I was hooked on preparing amazing food and working with quality fresh, healthy ingredients. Weekends and holidays were spent hunting and fishing through the highlands and cooking our catch.
